Chia is a very versatile seed from Central America. Chia means “strength” in ancient Mayan because it contains essential omega 3 fatty acids, soluble fibre, iron and calcium. Used in everything from drinks to a thickener in smoothies and here as a love goddess breakfast bowl. Note that chia along with flax may have an estrogenic action so should be kept to a minimum for women with excess estrogen symptoms. Luo Han Guo is a fruit native to China and has been used in traditional Chinese medicine for centuries. Available from health food shops. It has virtually no carbs and a sweetness without the bitter aftertaste.
½ cup of chia
1 cup of cashews
½ cup of raspberries or papaya
2 cups of watee
Pinch of cardamon powder
1 tbs of beetroot powder
1tbs of cacao butter
1 tsp of rose water
Sweeten with a pinch on Luo Han Guo (Monkfruit with zero carbohydrates)
Blend the cashews for 2 mins with water, beetroot powder, cacao butter and cardamon with a pinch of Lo Han Guo to make a pink creamy drink.
Place ½ cup of chia seeds into a clean sterilised mason jar and add the cashew cream. Stir well so no lumps or chia are left at the bottom of the jar. Or pour into small glass jars and leave in the fridge for an hour to firm up.
Serve with berries/papaya, cacao nibs, pecans, fresh mint, coconut cream or yoghurt.
