Every batch of these life savers is different depending on my mood. At the moment I am using beetroot powder to make them glow pink. They pair perfectly with Lunar Latte or Beetroot Latte; we all need a little more of the feminine right now.
If you are sensitive to sugar and dried fruit, use a pinch of Monkfruit powder (Morelife organic available from health food shops) and Loving Earth mesquite. I also throw in 4 squares of Loving Earth Salted Caramel Choc to each batch for the smoothness, available in bulk section of health food shop. See, anything goes – a couple of drops of Lemon Young Living essential oil, or 1 tps of rose water and some cardamon. Play 🙂
Ingredients
2 cups of organic cashews
2 Tbs of organic beetroot powder, add more if you want more pink
2 Tbs of organic cacao butter
2 Tbs of organic cacao nibs
2 Tbs of pumpkin seeds, Styrian variety are dark green and highly nutritious
1 Tbs of tahini or nut butter of your choice
1/8 tsp of coarse Himalayan/Macrobiotic salt
1/8 tsp of Monkfruit (Lo Han Guo) sweetener
1 Tbs of Mesquite powder
Blend the cashews and salt to a fine powder. Add remaining ingredients and
process until the mixture resembles fudgy truffles. Blend more if you want a smoother texture.
Enjoy the mediation of slowly rolling about 20 small balls and sharing with a friend. (across Skype!)
